Woodfired Turkey


6 to 11 lb turkey
4 cups of breadcrumbs
1 large onion
1 can of cranberries - drained
1 - 2 tsp of fresh parsley or mixed herbs
3 tbsp butter melted
1 egg
Salt & pepper


1. Combine all the ingredients and stuff the turkey .

2. Place oiled turkey in roasting tray (if using foil tray be sure to double up for strength).

3. Light the oven and get to hot temperature. Let temperature fall for 30 minutes.

4. Place turkey in oven uncovered for 10 minutes and then cover with foil (slit foil in a few locations).

5. You will need to rotate the tray and baste ever 20 minutes for the first 60 minutes (3 turns).

6. Do not add any more wood. Turkey is ready when the juices run clear when prodded between the legs and body.
