Salsa Verde Mushroom Pizza


.3 cup extra-virgin olive oil
3 cloves garlic - crushed
1 lb button mushrooms - sliced
.5 cup freshly grated Parmesan cheese
2 tsp whole grain mustard
.5 cup fresh flat-leaf parsley leaves
.5 cup fresh mint
.25 cup fresh breadcrumbs
1 tbsp capers - rinsed and drained
2 anchovies


1. Mix 1 tbsp oil, 2 crushed cloves garlic and sliced mushrooms together.

2. Stir in the Parmesan cheese.

3. Spread mustard over pizza base.

4. Top with mushroom mixture.

5. Place in oven to cook.

6. Salsa Verde: place all in loud processor – parsley, mint, breadcrumbs, anchovies and remaining oil and garlic - process until well combined.

7. Place salsa Verde on top of cooked pizza and serve.
