Portuguese Chicken


1 Red onion, chopped
6 Garlic cloves. chopped
3 tsp grated lemon rind
2 tsp chili flakes
1.5 tsp paprika
.25 cup oil
.25 cup red wine vinegar
4 1lb chicken pieces
.3 cup chopped flat leaf (Italian) parsley
Lemon halves for garnish


1. Put the onion, garlic, lemon rind, chili flakes, paprika, oil and vinegar in a processor and blend them to a smooth paste.

2. Score each piece of chicken and brush it with the spice mixture.

3. Put the chicken pieces in a terracotta dish, cover and refrigerate overnight.

4. Remove dish from fridge at least 1 hr prior to cooking so the dish and food are closer to room temperature.

5. Place the chicken in the oven med — low heat and cook for 10 min.


1. Sprinkle with parsley and serve with the lemon halves.
