Ginger & Lime Kebabs

These are great quick and easy starters. Ingredients below are enough for 6 people.


Use 6 medium or 12 small skewers
1lb. either fish, chicken or pork (bite size cubes)
Selection of in season vegetables
Capsicum, courgettes, red onion, mushroom, cherry tomatoes


3 limes
1 tbsp green cardamom pods
1 onion, finely chopped
1.5 tsp crushed ginger
3 tbsp olive oil


1. Grate the rind and squeeze the juice from limes.

2. Split the cardamom pods and remove the seeds. Crush with a mortar or the back of a heavy knife.

3. Mix together and spread over the fish.

4. Marinate for 2 — 3 hours.

5. Thread skewers.

6. Heat cast iron dish with olive oil until you see smoke rising from the oil.

7. Place skewer onto cast iron dish and cook for approximately 15-20 min turning at least once during cooking time cook.
